Creativity is Key! Bucking Employment Trends
The high cost of childcare and commuting is forcing women to give up their jobs to avoid ending up out of pocket, according to new research.
The latest ONS Labour Force Survey says the number of women opting to look after their children instead of doing paid employment has risen by 32,000 nationally since last summer, with rising childcare costs being a key factor in their decision.
However, local, entrepreneurial parents are taking matters into their own hands and returning to work under their own terms.
Two examples of success are For Sanity’s Sake co-founded by Rachel McLean and Andrea Quinteo, from Twickenham; and the local franchise of Caterpillar Music started by Emily and Tim Mascarenhas from Teddington.

Recipe: Rustic Pesto Chicken
This is such an incredibly easy main course that takes only minutes to prepare and uses very few ingredients. It has a wonderful taste of summer and makes great leftovers (if there are any!) This recipe can easily be doubled and other vegetables such as courgettes, mushrooms or peas could be added to the tomatoes in the dish.

Recipe: 7 Minute Peanut-Lime Noodles
“This fabulously quick meal can be cooked in minutes, eaten hot or cold and can be made as a vegetarian or meat based meal. It is so quick to cook that the most time consuming part is bringing water to boil and cooking the noodles. Another fantastic thing about this recipe is that it is pretty much “no measure.” As long as the ingredients are in roughly the right quantities the recipe will work well. The shear simplicity of these noodles make them a new favourite!”

“It’s so nice to start a Sunday by having a nice hearty brunch with your friends or family. This recipe is a variation of huevos rancheros which is a popular breakfast in Mexico meaning “eggs ranch-style” or “eggs country-style”. The dish traditionally was served for on rural farms for a mid-day meal and is traditionally made with corn tortillas, vegetables and eggs. too make this meal slightly more European I have replaced the tortillas with polenta and added large quantities of vegetables to make a wonder healthy brunch.”

Recipe: Thai Curried Chicken Salad
It’s January so if you’re anything like me you’ve decided its time to eat healthy and save some money. One of the easiest ways to do both at once is to bring a packed lunch to work. Not all offices have microwaves (or at least not microwaves you’d actually want to use) so the lunch possibilities are often limited to things that can be eaten cold, like salads and sandwiches. I must admit I get a bit bored with both so I came up with a recipe that’s a bit different, a little bit spicy and remains healthy at the same time. This Thai Curried Chicken Salad can be eaten either as a sandwich filling or on top of a salad.

Recipe: Spicy Turkey Jambalaya
“Christmas is soon approaching and many of us will be sitting down in a little less than a week to a huge turkey dinner. For the cooks in the family, the turkey dinner is a true feat of ability. Trying to get the turkey nicely browned, the sprouts perfectly cooked, the potatoes roasted to crispiness, all while keeping the in-laws and children at bay, truly requires immense planning and timing abilities and tests the skill of even the most talented chef. It’s no wonder then that after Christmas dinner is over, the cook is exhausted and ready to throw the turkey some place where it will never been seen again! Don’t do it! There are so many brilliant ways of using those turkey leftovers that aren’t just boring sandwiches and microwaved leftovers. My absolute favourite way of using turkey leftovers is to make a hearty jambalaya full of spices and vegetables.”
